Santa Fe Breakfast Croissants
Oh my goodness, talk about a great breakfast croissant that is Vegetarian and delicious! These Santa Fe breakfast croissants tastes so good and are easy to put together! So, how about making something a bit different for breakfast in the morning? Yum!

All you have to do is fry up some potatoes, grate some cheese, slice up some avocados, top it with salsa and there you have it, a Santa Fe breakfast croissant sandwich!
This was the first recipe I made for my family that included cheese since we changed our diet. My boyfriend and daughter have missed their cheese, and like I said in a recent post, they are now Vegetarian. Some of my recipes will now include Vegetarian dishes and desserts.

Santa Fe Breakfast Croissants
Ingredients
- 6 croissants
- Spicy Home Style Potatoes
- 1 cup cheese grated (any type cheese will work)
- 2 ripe avocado pitted and sliced
- â…” cup salsa mild or medium
Instructions
- Cut croissants in half.
- Add home style potatoes to croissants.
- Top with grated cheese.
- If needed, heat in microwave for 20-25 seconds to melt the cheese.
- Add sliced avocados
- Top with salsa.
- Enjoy!
